Delicious Red-Cooked Pork, the Home Style, so you could make it at home whenever you want. Before you are going to make this dish, please read several notes below:
1, Please using the cold water before boiling pork pieces. It will have a better effect to remove excess grease and that could be more better If you add 1 tbsp yellow wine into water (it can remove fishy smell of pork).
2, To using tomato sauce replace brown sugar, it is not only having beautiful color but also neutralizing grease of pork.
3, Don’t add too much seasonings and spices into this dish, that could cover up the original fragrance of pork.
Ingredients:
- 1.650g pork belly, diced
- 2.300g potatoes, diced
- 3.20g tomato sauce
- 4.15g soy sauce, dark soy sauce respectively
- 5.10g crystal sugar
- 6.10g yellow wine
- 7.10g green onion, ginger respectively, both sliced
- 8.3g cumin, star anise, prickly ash and bay leaves respectively
- 9.1 tsaoko

Instructions:

Clean potatoes and pork belly first, then dice them into small pieces.

Pour 1000 ml fresh water in pan, add pork pieces, 1 tbsp yellow wine and few grains of prickly ash in pan. Boiling until pork pieces are half cooked. Set aside for later use.

Heat up 3 tbsps oil in pan, add tomato sauce, stir frying for about (2~3 minutes).

Add half cooked pork pieces in pan and continue to stir fry over low heat until the pork pieces are coloring. Add salt, soy sauce, dark soy sauce and crystal sugar, stir frying evenly.

Transfer pork pieces in a casserole. Pour boiled water into casserole until submerging pork pieces.

Add diced potatoes, sliced ginger and green onion, and the other seasonings into casserole. Braised for about one hour. (first over high heat unitl boiled, then turn to low heat.)
